Carrot & Peas Vegetable – Jaipur Cooking Class

This recipe comes from my “home cooking class in Jaipur


 1. Fresh carrots 1/2 kg

 2.Fresh peas 250 gram

 3. Medium size 2 onions (finely chopped)

 4. 7-8 cloves of garlic (grounded) 

 5. Red chilly powder 1/2 tea spoon

 6. Turmeric powder 1/2 tea spoon

 7. Coriander powder 2 tea spoon

 8. Salt to taste

 9.Groundnut oil 2 table spoon

10. Cumin seeds 1/2 tea spoon 

11. 3/4 cup water 

How to Cook Carrot & Peas – Jaipur Style

Peel and wash the carrots. Cut them into 1/2 inch dices. Peel the peas wash them & keep them in a bowl. Now heat the pan & add the oil. Once the oil is heated,add cumin seeds. Once the seeds turn to dark brown , add finely chopped onions. Cook the onions till light brown in colour. Add grounded paste of garlic, red chilly powder, turmeric powder & coriander powder. Add 3/4 cup water to cook the powdered spices. Once the oil is visible from the side of the pan, it  means the spices are ready. Add carrot and peas to it. Stir it properly so that the veggies are merged in the spices well. Put a lit and leave for ten minutes. Keep checking in between too. Once all the water of the veggies is dried up. Now the vegetable is ready & it has turned tender too. Salt should be added along with all the powdered spices. Serve hot with chapati
