This recipie comes from my “home cooking class in Jaipur“
1. One & half cup long Basmati rice
2. Half bowl fresh peas
3. Two full tablespoon groundnut oil
4. Whole spices ( 2 bay leaves, 2 cloves,1 black cardamom, 4-5 black pepper)
5. Salt( to taste)
6. 1 medium size onion finely chopped.
7. 3.cups of water
How to Cook Peas and Rice
Wash and store rice in water for half an hour.
Put the pan on fire and heat it. Add oil. Wait till it becomes hot. Now add whole spices & immediately add chopped onion.Stir it till transparent. Now drain water from the rice and add to the onions. Keep frying till the water evaporates & each rice is nicely fried. Add double the quantity of water,salt & fresh peas. Cook it open – Do not put a cover on the pan. After the water is reduced to minimum, switch off the stove & cover it for ten minutes. After 10 minutes you can serve it hot.
